package RICE-A-RONIĀ® Chicken Fajita
1
pound uncooked, boneless, skinless chicken breasts, cut into 1-inch pieces
2
tablespoons margarine
2
cups water
1
cup corn (optional)
2
tablespoons chopped cilantro (optional)
Preparation Steps
1. In large skillet, combine rice, 1 1/2 cups water, 2 Tbsp. margarine and 1 lb. uncooked, boneless, skinless chicken breasts, cut into 1-inch pieces; bring to a boil.
2. Cover, reduce heat to medium-low and simmer 14-18 min. or until most of water is absorbed.
3. Slowly stir in 1/2 cup water and Special Seasonings. Increase heat to medium-high; stir and cook 2-4 min. or until most of liquid is absorbed.
4. Cover and let stand 5 min. Stir before serving.
Cook Tips and Variations
Add 1 cup corn when adding Special Seasonings. Top with 2 Tbsp. chopped cilantro before serving.
