package (4.6 oz.) RICE-A-RONI® Savory Whole Grains Spanish

teaspoon olive oil

cup drained and rinsed canned black beans

whole wheat tortillas (7 to 8-inch diameter), warmed

cup (4oz.) shredded reduced-fat Mexican-style cheese blend

cup sliced green onions (green tops only)

cups shredded lettuce

cup chopped tomatoes

cup guacamole
Preparation Steps
1. In medium saucepan, combine contents of seasoning packet, rice, water, olive oil and, if desired, cayenne pepper. Bring to a boil. Cover; reduce heat to medium-low. Simmer 24 to 26 minutes or until most of water is absorbed. Uncover and stir in beans. Let stand covered 5 minutes.
2. To assemble burritos, spoon rice and bean mixture on lower third of each tortilla, dividing evenly. Sprinkle cheese and green onions on top of rice mixture, dividing evenly; roll up tortillas enclosing filling.
3. To serve, place two burritos on each plate. Top with lettuce, tomato and guacamole, dividing evenly.
Cook Tips and Variations
• To warm tortillas, wrap in aluminum foil. Heat in 350ºF oven for 10 minutes. • One-half cup each shredded Cheddar and Monterey Jack cheeses may be substituted for Mexican-style cheese blend. • Prepared guacamole can be found in the supermarket deli or dairy aisle.
